One evening, we drove into Aransas Pass and tried a tiny seafood shack that locals swore by. The gulf oysters, seared scallops, and blackened redfish were sublime. We lingered over key lime pie and local ice cream. Another day, we discovered a funky Tex-Mex café in Rockport that plastered artwork of coastal birds on its walls.
Back at the resort, after a day of exploring, we cooked our own version of blackened redfish on the griddle. (Cajun spices, butter, sear quickly on each side).
