We pulled into the resort just as the late afternoon sun cast long shadows across the manicured lawns. The concrete pad at our site was level, our rig fit perfectly, and within minutes we had hooked up full service (water, sewer, electricity). The resort staff greeted us with friendly waves and directions to the clubhouse.

That evening, our first stop was the clubhouse kitchen, where they were hosting a welcome potluck. We contributed a pan of my grandmother’s Tex-Mex bean casserole, while neighbors brought grilled veggies, guacamole, and a fresh fruit salad. Our kids made fast friends tapping on the pool table inside, while my husband wandered over to the dog park to let our border collie, Luna, stretch her legs.

Later, we sat on folding chairs by one of the four stocked ponds, casting lines under a pink sky. My daughter squealed when she pulled in a small perch. As darkness fell, we lit lanterns around the campsite and listened to distant laughter from a karaoke night in the clubhouse.

Recipe idea: Tex-Mex Bean Casserole — layered black beans, corn, sautéed onions, peppers, a blend of cheeses, topped with crushed tortilla chips. Bake 20 minutes at 375 °F until bubbly.

Tip for families & pets: The dog park has an agility course — bring a toy or treat to keep your pup engaged. And pack comfy walking shoes — the resort paths are ideal for evening strolls.
